Dinner tonight!

People always ask me what's for dinner.  I think i will start trying to post occasional recipes...as well as info on my sweet family!  Today we are battling the snuffles so lucky for me, most of dinner could be made during naptime (always a bonus!).  Tonight we had crockpot roast, broccoli and rice casserole, mac n cheese casserole, mashed potatoes, green beans, and Schubert rolls.

The roast, green beans, corn and rolls are just ordinary. The mac and broccoli are my dishes to discuss tonight.

Mac and cheese casserole:
2 TBSP butter or margarine melted
2 C milk, at least 2%
Dash of salt and dried mustard
4 oz Velveeta
1 C macaroni noodles - UNBOILED
2 cups sprinkle cheese...any will work. I've used Cheddar, mozzarella

Chop Velveeta into thin slices. Mix together everything except 1 cup of cheese. pour into a sprayed casserole dish ( smaller than 9x13...I have been using a corningware.). Cover with aluminum foil and bake in a 400,degree oven for one hour. Remove foil and sprinkle last cup of cheese on top. Place back in oven until cheese is melted. Voila!!! Awesomeness in a dish!!

Broccoli and rice casserole:
Yet another extremely difficult dish :-)

1/4 cup chopped onion
1/2 stick margarine
1 package frozen broccoli
1-1 1/2 cups cooked rice
1 can cream of mushroom or chicken
1 can cheddar cheese
Salt and pepper to taste

Sautee onions in margarine. Cook broccoli until desired consistency. Mix rice, both cans of soup, salt, pepper, and onions together. Fold in broccoli and pour in a 9x13 dish. Bake on 350 for 30-45 minutes. We ate it just like this tonight, although I have topped it with crushed crackers, sprinkle cheese, and corn flakes. Enjoy these two recipes...tomorrow is a simple meal...spaghetti!!
