Ellieisms

A girlfriend of mine does this with her children, and I think I should do the same.  I was writing them all down in my planner, but this way they will be easier to find. 

Ellieisms

  • I can open the refrigerator because I'm so strong.  I have the muscles of a almost 4 year old...see? (while holding out her arms in muscle pose)
  • I'll be the teacher, Daddy you be the Principal, and Mommy you be Ms. Mindy (her preschool teacher)...this seems to be one of her favorite "games" now.
  • I like my new bed.  It's scary and all, but it's perfect. (We rearranged her room on Monday).
  • What's your favorite food?  BROCCOLI!!!
  • EK, where do you want to go eat?  Pizza Palace!
  • I was asking her what she wanted to eat the other night for girls night...her response: Well, I'm not really feeling Chick-Fil-A, so let's get one of those cheeseburgers you dip in the gravy (an Arby's French dip)
  • Mommy, look, I'm cleaning the bathtub to help you.
  • oooohhhh, there's tracker barrel.  I llloooovvveee tracker barrel. (She's got her /k/ sound mastered now, but she still slips back into /t/ sound habits now and then.)
  • Her favorite toys: "Mouse" the cat, Burger the cat, Kathryn her Bitty Baby, any of her Disney Princess babies or toddler dolls.
  • Barbies:  Yeah, they're OK, but they're definitely not my favorite.  We don't have to have them if you don't want them. (This is her response after I excitedly found all my old Barbies, cleaned them up, and got them ready to play with in her Barbie house).

FAT TUESDAY!!!

So I am in full out Disney Mode.  I eat, sleep, and dream Disney.  We leave in just a few days and I'm mixed with emotions!  I'm excited because I can't wait to see little bit's face the first time she sees the characters, the shows, the rides; but I'm also a little anxious/nervous that it will be so much for her.  She tends to have a little bit of a stand-offish personality.  I hope the room is nice and fun for her.  I hope she makes tons and tons of memories!  I hope the weather is nice.  Oh, I just can't stop thinking about it!  That, in turn, has made cooking nearly impossible in our house!  Yes, we've still been having a meal every night, but I am just trying to use up as much of the food we already have at home so everything has been thrown together.  Well, last night was no different in the thrown together mentality, but since it was Fat Tuesday, I felt like we needed a "southern French" feel to our food.  Introducing, Bowl Lickin' Jambalaya!

Jambalaya
You'll Need:
1-2 polish sausage links (sliced up real small)...I used 1 1/2 because Lil Bit and I had ate the other half the other day as "hot dogs".
1/2 stick butter
1/2 onion chopped
1 can diced tomatoes (I used Rotel)
2 1/2 C. rice (I used minute rice)
Creole Seasoning
Minced Garlic
(OPTIONAL) Chicken breasts/Shrimp

I sliced my sausage thinly and tossed it into a skillet with the butter, onions, and garlic.  I cooked them until they were brown and the onion was nicely sautéed.  Then I poured all of this in my crock pot.  I actually did the sausage part the night before.  I realized I had an extra boiled chicken breast in the fridge from the day before, so I shredded it and added it in the crock pot as well.  I then covered the meats with creole dry seasoning and poured in the entire can of Rotel.  I'm not sure the crockpot was necessary/a good idea, but I wanted everything to be warm and ready to eat when I got home.  I left it on low all day just to warm up, and it cooked the sausage a little more making them look a little darker than I prefer, but they tasted just fine.  Next time, I might would just cook it all in a large stock pot right before eating...but I like having the options.  About 30 minutes before eating, I went ahead and boiled my water and made the rice by following the directions.  After it was cooked, I went ahead and stirred it into the crockpot as well.  I left it on keep warm until time to eat.  By this time I was thinking we needed something else to go with this (because I knew it would be a tad spicy and little bit HATES spicy).  So we had a packet of red lobster cheddar biscuits in the cabinet, so I threw those together too.  This would also be good with a soup, or side salad, but we just gorged on the jambalaya alone.  Warm and yummy!!

Dump Cobbler = Quick Dessert

I am SO TIRED this week!!  Work has been eventful (it always is when it's my morning bus duty week) and so I feel drained.  Thankfully the hubby and little bit have been wonderful and helpful, but I'm still really far behind on housework and other things.  Hopefully I'll catch up tonight.  Last night we tried the mini cheeseburger cups from yesterday's post.  They were YUMMY!  I didn't have a can of French onion, so I just improvised by adding onion salt to my meat.  They cooked really well, and came out well.  Even little bit said she liked them.  Tonight we are having chicken spaghetti (already posted on the blog) and probably a dessert since I pre-made my spaghetti last night.  I'm thinking a dump cobbler...

Dump Cobbler (cherry was my Dad's favorite!)
1 stick margarine, melted in the bottom of a bowl (I believe I use around a 4-6 cup glass bowl)
1/2 C. sugar
1/2 C. milk
1/2 C. bisquick
1 large can fruit pie filling (we tend to go with peach, apple, or cherry)
Ice Cream (optional)

Melt the butter in the bottom of a bowl, and set aside.  Mix together sugar, milk, and bisquick and pour on top of the butter.  DO NOT MIX.  Gently spoon fruit into the batter, again, DO NOT MIX!  Cook in a preheated oven on 350 for about an hour.  Scoop into bowls and top with ice cream.  Enjoy a wonderful dessert with the family while discussing "Q" words like we have this week (Little Bit has a new letter to learn each week).

This was NOT on the agenda for today!

Anyone that knows me well, knows I ALWAYS have at least one (but usually 3 or 4 if you count my phone) calendar on me at all times.  Everything is planned out well before it is set into motion.  It's so severe, that it might be borderline mental, but I LOVE it!!!!  If everyone is ever THAT interested, I will go into more detail, but let me just give you a glimpse:  My meals are planned out by the beginning of the MONTH (yes, you read right, month...not week), I have a daily cleaning chart (I actually had a poster size one that I taped on the kitchen wall, but I took it down recently; although I'm tempted to put it back up), I have birthdays, anniversaries, annual events listed for the entire year within the week of getting a new calendar.   Now, let me remind you we are only a family of three...and a very UNBUSY family of three at that!  Anyway, to the point already!  Last night I was going about my normal routine...came home, started picking up laundry for a load, pulled the polish and Windex (Tuesday night chores), changed into my comfy clothes and started dinner.  That's about the time I got a text from a friend asking if Little Bit and I wanted to hit up the Galleria for supper and a spin on the carousel.  I was torn...do I forget what I was doing already and take Little Bit out for a fun night with mom and friends, or do I politely resign the offer and stick to the plan.  It was a no-brainer!  Now, even though I love my schedules, I love the chance to do anything with Little Bit to help create a lasting memory in her sweet little head (even if it is a short-lived memory).  I look at it like this:  I had already browned my meat for the mini cheeseburgers, sautéed the onions for hash brown casserole, so I was just 2 steps ahead for the next evening!  We loaded up in the car, left the hubby at home, and had a night out with friends that included a yummy meal from Chick-Fil-A, a ride on the carousel, and shopping in the store "with sparkly floors" AKA Galleria's Old Navy.  We still were home in time for bed and books, so the most important part of our schedule was still intact.  Now, in case you were wondering about the meal we were SUPPOSED to eat last night...and WILL eat tonight, Mini Cheeseburgers (found and adapted from Campbell's, so I'm just going to link it in rather than re-typing!)

Campbell's Mini Cheeseburger Cups

We are going to add hash brown casserole as our "potato" rather than fries...

2 lb. frozen hash browns, thawed

8 oz. (1 C.) sour cream

1 can cream of chicken soup

8 oz. (1 C.) shredded cheese

1 t. salt

½ C. minced onion

½ t. pepper

1 stick melted butter (1/2 in mix/top)

 Butter dish bottom, and top with corn flakes or crackers

Mix all and put in casserole dish.  Top with corn flakes , cheddar cheese, or crackers and bake at 350 degrees for about 1 hour, or until heated through. 


**This makes a 9x13 casserole dish worth.  I usually put mine in smaller Pyrex dishes and freeze a few portions because it is way too much for a family of three.  The leftovers from the one I will cook tonight will be included in breakfast for the next few days.  If I'm in a hurry, it will just quickly be microwaved; but the best way to reheat it, is to plop spoonful's in the skillet and fry them until there's just a little crunch!  It's time to set the table for another family meal!

So last night was the Super Bowl.  What a fun time it was!  I think I watched maybe 5 minutes, but the playing with the kids, eating the yummy food, and just enjoying the madness of the moment made it all worthwhile.  We went to a friends, and as I always do, I had to make a snack...just wish I would get better about taking pictures of these mentioned snacks. 

I had premade Oreo truffles in the shapes of footballs, which included white laces.  Now these are so simple to make!  Take a package of Oreos and chop them into fine crumbs with a food processor.  Next, use a hand held mixer and mix Oreo crumbs with 1 package of cream cheese.  Roll into small balls (or in my case, footballs).  Allow to set in fridge over night to firm.  Dip in melted chocolate or white chocolate and put on wax paper to completely dry.  YUM!! 

I also made pizza pull apart bread (a Pinterest find that I am SO happy I tried!!!).  This is pretty simple too!  You'll need 2 cans of pizza dough, 2 C. mozzarella cheese, 1 package mini pepperonis, 1/3 C. oil.  Cut the dough into bit size pieces and drop in a large bowl.  Dump the cheese and pepperonis in the bowl with the dough, and then add the oil.  Mix well with your hands, then dump into a greased bundt pan.  Bake on 350 for about 45 minutes (or until it almost looks burnt!).  Flip onto a plate and enjoy with marinara sauce for dipping. 

Our final thing I had a part in making, was homemade icing for a friend's daughter's birthday.  We are attempting to make "pumpkin" cupcakes!  So we started by using the Wilton's buttercream icing recipe.  We had plans of doubling it, so we used 1 stick Crisco, 2 sticks margarine, and 1 lb. confectioners sugar.  We then started chatting, and only added 2 Tbsp. of milk.  After mixing it, the consistency (and taste) seemed awesome, so we omitted the vanilla and the extra milk.  It was divine! 

I had a bag of icing for piping, and in a matter of minutes, I had 3, no 4, little hands with one finger laid out to be "frosted".  They know me all to well!  Poor E didn't know what to do/think of the icing, so she just spit it out.  Tiny T LOVED it so much, I finally just told him to put out his tongue, and I would cover it in icing.  My bag got empty pretty fast!  Our 2 big girls loved it too, but they knew a cupcake was coming soon, so they just went back to playing.  As we got in the car to leave, Little Bit said, "OK, I do want a baby sister that's a girl.  And I want to name her Jojo.  Because she's the SWEETEST and I just love her!"  Obviously this play date was beyond successful!

Meals: Week 2!

The weather is cold! Why not warm it up with some good homemade food?

Monday - Taco Soup

Ingredients - 1 lb. hamburger meat (browned and chopped), 2 cans corn, not drained, 2 cans chili beans, 2 cans tomato sauce, taco seasoning packet, dry ranch packet

Yes, there are many varieties to taco soup. I like this one because it is simple! And simple is good...especially with little bit that can eat everything under the sun one day and be beyond picky the next! With this one, I usually brown my meat the night before. This morning, I dumped all of the cans (as is!), dumped the meat, and the 2 seasoning packets into my crockpot. Turn it on low for 8-10 hours, and there's supper! We add a variety of toppings to suit everyone's needs including jalapenos, salsa, sour cream, sprinkle cheese, tostitos, and occasionally black olives (little bit LOVES black olives!) This makes plenty, so get ready for leftovers the next day...another win in my book!


TUESDAY - Chicken Salad croissants, green beans, macaroni and cheese

Ingredients - rotisserie chicken (deboned and shredded), 1 package cream cheese, salt and pepper, can of croissants, can of green beans, 2 beef bouillon cubes, boxed mac and cheese (and the things needed as mentioned on the box)

So, tonight I'm taking it easy! Preheat oven to 375. Take the deboned chicken and place in a mixing bowl. Add cream cheese, and salt and pepper to taste, and mix well with a handheld mixer. Blend well, set aside. Open the green beans, bouillon cubes and put in a sauce pan to simmer on medium. Open the can of croissants and spread out each triangle. Place about 2 heaping tablespoons of chicken salad on the long part of the croissant and roll up. Place on cookie sheet for baking. Repeat until all croissants are used (I usually have tons of chicken salad left over that we eat the next day on toast, or I'll pop open another can of croissants and keep on going). Place in oven on 375 for about 10-15 minutes (make sure they are cooked thoroughly...sometimes the tops look more done than they actually are!). While croissants are baking, start macaroni (so simple, just follow directions on the box). Everything should be finished about the same time, so a nice warm meal will be ready to eat!


WEDNESDAY - Ravioli Bake

Ingredients - 1 lb. hamburger meat (cooked and drained), jar of pasta sauce, 1 bag frozen cheese raviolis, mozzarella cheese

Brown hamburger meat, drain fat and add jar of sauce. Allow to simmer just a minute. Take a 9x13 (or we sometimes do a square casserole dish) and spread a small amount of sauce on the bottom. Next, make a layer of raviolis, follow with sauce, then a little bit of mozzarella cheese, repeat layers until raviolis run out. MAKE SURE TO HAVE ENOUGH SAUCE TO COVER...SAUCE MUST BE TOP LAYER TO KEEP THEM FROM BAKING HARD!! Cover with aluminum foil and bake in oven on 350 about 30 minutes. Remove from oven and toss aluminum foil. Cover with remainder of cheese (I like to keep at least 2 cups for the top) and place back in oven to melt cheese. Small tip: I usually put my Ravioli Bake together the night before so the flavors can soak in. Great with a side salad and some type of toast.


THURSDAY - Pot Pie

Ingredients - 1 box (refrigerated) pie crust, 1 can of chicken (drained) 2 cans mixed vegetables (drained), 1/2 block cream cheese, cream of Chicken soup. 

Preheat oven as directed on pie crust box (I believe 350, but check!).  Place canned veggies in a sauce pan to warm up.  Once they're warm, drain, and immediately add drained chicken, salt and pepper to taste, and cream cheese.  (Warming just helps the cream cheese melt easier without smashing up all the yummy veggies).  After it is mixed, carefully pour in the cream of chicken soup.  Put one crust in the bottom of a pie dish, pour veggie/cream cheese/chicken mixture and then cover with other pie crust.  Trim edges and seal them together with your fingers.  Slice small slits in the middle of the top in a "flower" shape.  Bake for about an hour until the crust is nice and tan.  Oh nothing beats pot pie on a cold night!


FRIDAY - Chili Cheese Dogs and Fries

Ingredients - can chili, hot dogs, hot dog buns,  condiments to your liking, sprinkle cheese, and fries

YES!!  A night to gorge in all things bad for you!!  Boil your dogs, put em on the bun, and top with whatever you choose!  I like my fries cooked in the deep fryer, but that's all up to you!  Another week of meals at home in the books!

Meals week 1...an ongoing project!

I know I have lots and lots of friends that would love to cook good meals for their families every night, but tend to find excuses around every corner...unsure of what to make, don't have the ingredients, no time, etc. etc. I know this, because I have fallen into the trap too. I've decided to create this blog as a way to help those people! I am, by nature, a planner. I plan things that don't even need plans. Now, this week will just be used as a warm up week, but I'm hoping to (soon) post the ingredients needed the week before so whoever wants to join my cooking journey can do so! This week we all started back our full-time routines. Little bit at preschool, the hubs at work and school on Monday nights, and me working all day and attempting to keep the house in order at night. So here's how the meals went (and mind you, with a little pre-planning, these meals are thrown together in about 30 minutes)...also, I should point out, that these are simple, usually what we keep in the cabinet, supplies; so sometimes the meals reflect that.

MONDAY - Monday's are hard to cook since there are only 2 of us there. My first instinct is always pop in a pizza, or grab some fast food. Nope, not this year! We had BBQ kielbasa, potato salad, and corn on the cob.

Ingredients needed: 1 or 2 kielbasa, bbq sauce, aluminum foil, 2 potatoes, mayo, mustard, relish, 3 eggs, corn on the cob Preheat the oven to 350 degrees.

Line a shallow baking dish with aluminum foil. Slice sausage to your liking (I usually make 3-4 inch pieces) and then cover with BBQ sauce to your liking. Throw in the oven and allow to cook about 30 minutes. Next, peel and quarter your potatoes and place in a 2 quart pot of water. Allow to boil for about 10-15 minutes (depending on how well you like your potatoes cooked). Boil eggs at the same time (I did this the night before as I usually boil about 6 eggs on Sunday to use in meals during the week and/or for breakfast). Also, grab another pot, fill with water and drop in your corn. Follow directions on boiling :). After the potatoes are done, drain, and put in a bowl to finish the potato salad. I usually had about 1/2 C. mayo and 1/2 C. mustard, 2 Tbs. relish, lots of salt and pepper, and chop up your egg. Mix, but don't mix so much your potatoes are mush. About this time, everything else should be finished, so set the table, and enjoy!

TUESDAY - Hamburger Steaks w/gravy, mashed potatoes, Red Lobster cheddar biscuits made at home, green beans, and corn

Ingredients needed: 1 lb. hamburger meat, 1 brown gravy packet, jar of mushrooms (optional), 2 potatoes, milk, Red Lobster biscuit mix, cheddar cheese, butter, canned green beans, beef bouillon cubes, frozen corn

First thing, open your green beans and pour in a sauce pan. Add 2 bouillon cubes. I also added bacon drippings from that morning for extra flavor. That is certainly optional, but can make them yummy! You can also add ham chunks for yumminess! Turn on medium and let em go. I like to cook mine until all the water is gone and then add just a hair more, but that's up to you...just don't let them burn! If you hear sizzling, they're probably burning. Next, pull out a large frying pan. Divide your hamburger meat into 4 pieces, roll them into balls, and then flatten them into patties. Drop in your frying pan on medium. Cover with salt, pepper, and (optional) onion salt. I usually cook mine until I'm starting to see a little brown around the edges. Flip them with a spatula, and then press down on them to keep them from shrinking. If you're patient, you can let them cook until done on this side and they should be OK...I'm not patient, so I leave them about 5 minutes and then I flip, flip, flip every time I think about it to make sure they're cooking evenly. Peel and dice potatoes while waiting on first flip of hamburger patties. Cover in sauce pan with cold water and allow to boil. I usually let mine boil at least 15-20 minutes. They really just need to be able to have a fork easily pierce them. While all the items are boiling on the stove, go ahead and follow directions on biscuit mix package and pop those babies in the oven. Drop some frozen corn in a glass bowl with a little bit of margarine, pinch of sugar, salt and pepper to taste, and barely cover with water. Stick that in the microwave to heat (follow directions). Finally, get started on the gravy. Just follow the packets directions. While gravy simmers, remove patties from pan onto paper towel to dab extra grease and put in a shallow dish. Pull out corn and biscuits once done. Take potatoes and put in a mixing bowl. Add about 3/4 C. milk (add more or less depending on the consistency you want your mashed potatoes), add Tbsp. margarine, lots of salt and pepper and cream with hand mixer. About this time, gravy should be finished too. Pour it over the patties. If you choose to use mushrooms, drain and place in microwave safe bowl. Warm for about 30 seconds and drop on top of patties. Meal should be ready and on the table to eat now!

WEDNESDAY - Spaghetti, salad, toast

Ingredients needed: 1 lb. hamburger meat, 2 cans tomato sauce, Italian seasoning, minced garlic (I used jarred), onion salt or powder, a box of spaghetti noodles, hamburger buns, margarine, cheddar cheese and garlic powder

Put meat in a skillet with about a tablespoon of garlic (and chopped onion if you like!), allow to brown completely, then drain off the fat. Add tomato sauce, and Italian seasoning. I usually eyeball the seasoning, and basically cover the entire skillet with a thin layer of seasoning, onion salt, and a dash of garlic salt. Allow to simmer about 30 minutes while stirring occasionally. After 30 minutes, I start to boil my water for spaghetti noodles and place them in when it is time (follow box directions for prep choices). I continue to let my sauce cook on low. Get the salad in a bowl (bagged works well here, although I usually just buy a head and make my own), and turn the oven on for toast. If you prefer frozen texas toast type things, go ahead! I didn't have any, and I had some hamburger buns (hotdog buns work well too!) that I didn't want to go to waste. Basically, open them up and spread a good layer of butter/margarine on them. Then sprinkle a tiny bit of garlic powder and as much cheddar cheese as you can handle :). Pop them in the oven on 350 until cheese is melted (usually the amount of time it takes to remove my noodles from the stove and drain). My family is picky, so I don't mix together my sauce and noodles, but you do what your family prefers! If you don't mix them together, then add a Tbsp. of butter to the noodles to keep them from sticking.

THURSDAY - I didn't feel like cooking (SURPRISE!) so we ordered out Chinese...WIN!!!

FRIDAY - (I had to make up for Thursday...) Pot roast, gravy, rice, broccoli with cheese

Ingredients needed: 1 eye of round roast, roast seasoning packet, brown gravy packet, Mr. Ben's rice, frozen broccoli, Velveeta cheese

Pull out that crockpot for a super simple meal! Drop in the roast in the morning (don't worry, it can still be frozen) and sprinkle the seasoning packet on top. I add about 8 oz. of water, but you can follow the packet's instructions. Plug it in, turn it on low, and let it cook all day! That evening, boil your water for rice, toss the broccoli in the microwave, and get ready to make your gravy! I follow the directions on the gravy packet, except I always pull my "water" from the crockpot where the roast has been cooking. That gives it a little more flavor, but is totally optional! After the rice has boiled, the broccoli is cooked and the gravy is finished, pull out the roast and chop, shred, or slice. I like a little cheese on my broccoli, so I cut up some velveeta (amount will depend on how much you want to make AND how much broccoli you make) and add a small amount of milk to it. Microwave on 30 second intervals, removing and stirring in between, until melted. If it is too runny, add more cheese; too thick, add more milk. Pour on top of broccoli. Make a rice bed on the plates, cover with roast and gravy, and add the broccoli. Now, that's a weeks worth of meals that are all fairly simple! After practice, these meals should be ready in about 30-45 minutes! Enjoy!

OH, I also need to add that most of the meals I make I have found the recipe elsewhere.  If they are long-time favorites, then I may or may not have the original source, but I want to do all that I can to give credit where credit is due!!
