Chicken Spaghetti and a stormy night

Last night really got me thinking. I wanted to write, I NEEDED to write, so today, I will write. I have a little time at work every day, so there's no reason not to jot a quick thought. It was a stormy evening, and all I could think about was my Daddy. I sure do miss him right now! Well, the storms came through about 9:30, so, like usual we take drag the dogs outside one more time to take care of their nightly business. Well this time it wasn't business as usual. This time, there was a raccoon waiting for them...and this time, Barkeley was going to win! After a 5 minute or so tussle, finally John was able to corner the raccoon in a way I could grab Barkeley. No animal was hurt, but the dogs sure thought it was fun...we thought it was quite the opposite of fun! The best news of all was that EK got to sleep before it even started raining, and managed to stay asleep the entire night (although she had already assured us many times that she WOULD be sleeping in our bed!)
 Since I had planned on the storms wreaking havoc on my Monday evening, I planned my meal ahead. I always like to plan meals well in advanced (like a month ahead, with some "wiggle room" meals here and there) and the week of, I write them down in the kitchen so everyone is aware of what meals we are having...I try really hard to stick with what is written down, but things change, so sometimes we go with the flow :). I really need to start taking pictures of my foods to post on here to really help with the taste.  Ah, one day...

Chicken Spaghetti
1-2 C. shredded, cooked chicken (I cheated this time and used canned chicken, drained)
1 can cream of mushroom soup
1 small jar red pimentos, drained
1 C. shredded cheddar cheese, divided 1/2 box angel hair noodles, cooked
dash of salt and pepper

Cook your noodles (about 7-9 minutes). While they are cooking, mix the rest of the ingredients except for 1/2 C. reserved cheese. Once noodles are cooked, drain and mix well. Pour mixture in a greased 2 qt. dish. Cover with remaining cheese and bake about 20 minutes (or if you're starving, just cook long enough to melt cheese!). Enjoy with a side salad and some toast. Yummy AND quick!! Tonight we will be having skillet fried cheeseburgers (hubby's fave)...
